Cocina Mexicana is currently looking for 2 full time cooks with 1-  2 years of experience in Mexican cuisine, especially Prehispanic food such as, Cochinita Pibil, Pastor, Tamales, Corundas , and the diversity of Moles (Mole Pipian, Poblano). The successful candidate will need to:

• Prepare and cook individual dishes and food
• Ensure quality of food
• May plan menus, determine size of food portions, estimate food requirements and costs, and monitor and order supplies
• Work with minimal supervision
• Demonstrate “traditional “cooking techniques to cooking staff;
• Maintain inventory and records of food, supplies and equipment
• Clean kitchen and work areas.
• Must be able to prepare authentic Mexican Food.
• Must manage Buffet service
