Specialized Artisan Baker & Bakery Supervisor

Job Summary:

We are currently seeking to hire Canadians or permanent residents for the position of Specialized Artisan Baker & Bakery Supervisor. This role requires expertise in preparing traditional Middle Eastern baked goods, particularly Lebanese bread, phyllo pies, and savory pies. Additionally, the candidate will be responsible for supervising bakery operations, ensuring product quality, and managing production schedules.

The ideal candidate must possess advanced baking skills, especially in handling delicate doughs and specialty pies, while also demonstrating strong leadership abilities to manage and train bakery staff.

Salary :

We are offering an attractive salary of 36$ per hour to be negotiated.

This is a full-time job of 44 hours per week and the candidate should be willing to relocate.

 

Key Responsibilities:

Artisan Baking Responsibilities:

+ Specialize in the preparation and baking of:

Traditional Lebanese flatbreads (unleavened and leavened varieties).

Phyllo pies filled with savory ingredients such as spiced meats, cheeses, and vegetables.

Lebanese savory pies including:

Fatayer (spinach-filled pies)

Mouajjanat (small savory pastries)

Zaatar pies (thyme-spiced flatbreads)

Cheese pies

Pumpkin bulgur pies filled with spinach, walnuts, and labneh

Potato pies (spiced mashed potato filling)

Olive pies

Meat pies (ground lamb or beef with spices)

Pea pies, lentil pies, and other traditional Lebanese savory pastries.

+ Follow traditional Lebanese techniques for layering phyllo dough, ensuring thinness, texture, and crispness.

+ Precisely measure, mix, and shape dough for a variety of specialty items, ensuring consistent results.

+ Prepare batches of dough with proper fermentation, hydration, and proofing for optimal baking results.

+ Operate specialized bakery equipment, including dough mixers, sheeters, and traditional Saj ovens.

+ Follow established recipes with precision, ensuring consistent taste, texture, and presentation.

+ Monitor oven temperatures and adjust baking times for optimal results, particularly for delicate doughs and pies requiring precise conditions.

+ Ensure the freshness, quality, and visual appeal of all baked goods.

 

Additional Supervisory Responsibilities:

Supervise bakery staff in day-to-day operations, including assigning tasks, managing workflow, and ensuring production deadlines are met.

Train employees in specialized Middle Eastern baking techniques, hygiene practices, and safe equipment operation.

Draw up production schedules to manage output based on demand and minimize waste.

Oversee ingredient ordering, inventory control, and stock rotation to ensure freshness and  minimize spoilage.

Perform quality control checks on all baked goods to maintain high product standards.

Ensure compliance with all applicable food safety regulations, sanitation standards, and workplace safety protocols.

Act as the primary point of contact for bakery operations, reporting directly to store leadership.

Additional Requirements:

Must be physically capable of lifting heavy flour bags (up to 50 lbs) and transferring prepared dough to workstations.

Strong attention to detail to ensure recipe accuracy and consistent product quality.

Ability to troubleshoot bakery equipment issues and oversee routine maintenance.

Good leadership skills to effectively manage staff and maintain an organized production environment.

Qualifications :

The candidate must possess 1 to 2 years of relevant work experience as an artisan baker specializing in Middle Eastern baked goods, including phyllo pies, Lebanese flatbreads, and savory pies.

Possession of a certificate of specialization in artisan baking, pastry arts, or a related field would be considered an asset.
