Salary: $36.00 hourly for 30 to 44 hours per week

Qualifications: 

– Ability to communicate orally and in writing in English is required;

– Completion of secondary (high) school is required;

– 3 years to less than 5 years of work experience as a Sushi Chef in a high-end Japanese restaurant is required.

 

Job duties: 

– Prepare and cook food on a regular basis;

– Prepare, cook, and present the following Japanese dishes: sashimi, sushi, Aburi(blow-torched sushi), Oshizushi (pressed sushi), sushi roll; hot and cold appetizers such as miso soup and salad; deep fried dishes such as Nanban and Agedashi; and grilled fish collar;

– Supervise cooks and other kitchen staff;

– Train staff in preparation, cooking and handling of food;

– Create new recipes;

– Instruct cooks in preparation, cooking, garnishing and presentation of food;

– Plan menus, determine size of food portions;

– Estimate food requirements and food and labour costs;

– Maintain records of food costs, consumption, sales and inventory;

– Requisition food and kitchen supplies.
